The two semi-circular, heavy stoneware pieces are easy to insert and rest on top of food inside the crock, creating the downward pressure needed to keep foods submerged for proper fermentation.

Rinse well (three times should do the trick) before pickling a new batch. Simply dissolve the recommended amount in water, pour it into your barrel, and store in a cool damp place until you're ready to pickle again.

When your pickles are done, simply replace with the storage lid and refrigerate. Place the ceramic weights on top of the prepared vegetables and seal the jar with the unique air-lock lid that prevents outside air and contaminants from entering.
