Tasmanian Leatherwood Honey has been recognised by connoisseurs of food around the world for over 150 years. The first and most notable difference you will see that our honey is not a clear liquid but a light coloured, fine candied type with a set consistency. It is this candied state that is your guarantee that the honey has not been changed or damaged by temperature or by over-processing. We have developed an extraction through packaging process that realises the complete recovery of all the natural floral essences and wild vitality of the Leatherwood flower. A \"cool\" extraction process is used, to ensure that the honey retains its flavour and natural, softly candied texture. Honey contains amino acids, enzymes, vitamins, minerals and antioxidants and heat will destroy a lot of it's nutrients.
Not only is Tasmanian leatherwood honey unrefined, but also it is unquestionably pure. Because the company sets up its apiaries in remote, uninhabited wilderness areas - taking care to use totally sustainable, eco-friendly practices - the bees source nectar solely from virgin, unpolluted rainforest. There's no chance of them straying onto herbicide- and pesticide-soaked crops. An indication as to just how pristine the area is: There's a World Health Organisation air-monitoring station on the coastline nearby, and the results set the international standard for best air quality.
The purity of our honey is widely recognised, each crop being sampled and tested for a number of pollutants. None has ever been found. These tests have been carried out both in Australia and at a number of international laboratories. The Danish Health Authority, upon analysis of Leatherwood Honey, claimed it was the cleanest honey they had tested in the laboratory for over 20 years! Leatherwood honey has proved very pure after many years of sampling, typically 95-99% purity. The internationally accepted minimum for a named floral variety is 70%.
